Well, it wasn't a committee.
Aside from the council of bishops Constantine convened in 327 and locked them in a gymnasium telling them "you get fed when you come up with One Book, One Story, and One Church that I can use politically, of course...THAT was a committee. But nearly every book in there was written by different people, some of the books were pretty old, and even by then those books had been reproduced by many generations of COPYISTS who often had editorial agendas.
And after they agreed on 65 of the 66 books, many more centuries passed with sometimes massive editing. Plus, a lot of the OT and even some of the Gospel material had been kicking around as oral tradition for quite a while before it ever got written down.
